Saffron - Lemon Rice
1 t peanut oil
¼ t grated fresh ginger
1 garlic clove, smashed
1 small yellow onion chopped
Pinch saffron
¼ t lemon zest
2 c vegetable stock
Splash Chardonnay
1 c Basmati rice
Salt to taste
1. In a 4 quart saucepan, heat oil over medium heat and saute ginger,
garlic, and onion until soft.
2, Add saffron, lemon zest, vegetable stock, and wine. Bring to a boil.
Add rice and turn heat down to a simmer.
3. Cover and cook for 10 minutes. Stir and remove from heat. Let stand
covered for 15 minutes.

Transendental Tropical Ratatouille
1 T Olive oil
1 c Onion, chopped
1 T Garlic, minced
1 large Eggplant chopped
1¾ c Zucchini, chopped
¾ c Red bell pepper chopped
1 c Thai Coconut milk
1T Cilantro minced
Sea salt To taste
Black pepper To taste
1. Place oil in a large saute pan on medium high heat. Add onion,
and garlic and cook for 3 minutes, stirring frequently. Add eggplant
and cook for 5 minutes, stirring frequently.
2. Add Thai Coconut milk and cook for 5 minutes, stirring occasionally.
Add cilantro, salt and pepper to taste and mix well.

Indigo Angel has a halo of gold
And long flowing hair of Violet ..So Bold!
Her gown is of Blue, Red, Orange, Yellow, Green
And bright yellow wings that flutter and gleam
My Angel is Blue, she’s Gold and she’s Bright
She visits my room at nap and at night
I call to her softly and ask her to stay
To guard me and guide me, and show me the way
I close my eyes softly, in her put my trust
Then what do I see but Fairygold dust!
Fairygold dust, Blue, Orange, Red and Green
Drifts down from above, oh what a scene!
It glitters and sparkles and covers my head
It covers my face, my body and bed
She sprinkles it with joy and love and glee
She sprinkles it boldly all over me
She calls to me softly and tells me now see
A shiny Bright Bubble then drifts over me
It floats down around me and snuggles me tight
And protects me from things that go bump in the night
I drift off to slumber in Fairygold land.
And find my Blue Angel, she takes my small hand
She takes me to fly, and play in the sand
We float, fly, and play in Fairygold Land
Oh Fairygold dust and magical nite
Oh Indigo Angel my loving white light
I’m floating, I’m flying, I’m light I am Free
In dreams I explore, to see what I can see
As I fall safely and soundly to sleep,
I sigh and drift off to a slumber so deep
and thank the heavens and God above
That Indigo Angel watches over me with love
