Vegetarian Strawberry - Rhubarb Pie
Strawberries and rhubarb are a classic combination!
1 ½ lbs. rhubarb stalks, trimmed and cut in ¾-inch lengths
¼ cup evaporated cane juice
1 tablespoon all-purpose flour
1 dozen medium-to-large strawberries, hulled and cut into chunks
CRUMB TOPPING
8 tablespoons (¼ lb) vegan margarine
6 tablespoons all-purpose flour
¼ cup evaporated cane juice
½ cup oatmeal
¼ teaspoon almond extract (optional)
Preheat oven to 400° F (200° C). In an ungreased baking dish
or casserole, mix rhubarb pieces with sugar and 1 tablespoon flour
until rhubarb is evenly coated. Bake in oven for 10 minutes or until
rhubarb is tender.

Samurai Seitan
with Broccoli and Garlic
(20 min. prep/15 min. cooking/3-4 servings)
2 T
Sesame oil
1C Filtered water or vegetable stock
1 Onion sliced
3C Broccoli small flowerlets
3C Thin sliced green bell pepper
1C Snow peas
1½C Shitake or oyster mushrooms
½ c Nama shoyu or to taste
¼ c Garlic, minced
¼ c Mirin
1# Seitan ½ inch cubes
1 1/2 T Vegetarian Worcestershire
2 T White sesame seed for garnish
Place oil in a large saute pan on medium high heat. Add onion
and garlic, cook for 3 minutes, stirring frequently. Add water or stock,
pepper, mushroom, seitan, broccoli and cook for 8 minutes, stirring
occasionally. Add snow peas and remaining ingredients, cook for 3 minutes,
stirring frequently. Remove from heat and enjoy.
Serving suggestion: Serve over a mixture of long grain and wild rice.
